Prawn And Cashew Stir Fry

This quick stir fry is bursting with flavour and crunch, thanks to juicy prawns and roasted Montagu cashews. It's the perfect weeknight dinner—fast, filling, and full of goodness.

INGREDIENTS

Sauce

  • 60ml (¼ cup) soy sauce
  • 60ml (¼ cup) teriyaki sauce
  • 15ml (1 tbsp) sesame oil
  • 30ml (2 tbsp) water
  • 10ml (2 tsp) crushed ginger
  • 10ml (2 tsp) garlic paste

Stir fry

  • 20ml (4 tsp) olive oil
  • 400g prawn meat
  • 1 small brown onion, thinly sliced
  • 100g julienne carrots
  • 250g baby broccoli
  • 1 baby cabbage (about 175g), shredded
  • 80g Montagu Roasted Cashews, roughly chopped
  • Rice, to serve
  • 4 salad onions, sliced
  • Salt and pepper, to season
Servings: 4 portions

METHOD

  1. Add the sauce ingredients to a small bowl and mix well. Set aside.
  2. Heat half of the olive oil in a wok or large frying pan. Fry the prawn meat over a high heat for 3–4 minutes until pink and cooked through. Transfer to a plate and set aside.
  3. Heat the remaining oil in the same pan. Add the onion and carrot and cook for 2 minutes. Add the broccoli and cabbage and cook for a further 5 minutes.
  4. Pour the sauce into the pan and cook for another minute. Add the prawns and half of the cashews into the pan and toss everything together. Season to taste.
  5. Spoon the stir fry over rice and sprinkle with salad onions and the remaining cashews. Serve immediately.

Serve hot for dinner or pack cold for a power lunch the next day.
