Montagu Bobotie With A Twist

This bobotie has a delicious, fruity twist thanks to Montagu Turkish apricots. With warm spices, golden raisins, and a creamy custard topping, it’s a comforting family dish that pairs perfectly with rice and chutney.

INGREDIENTS

  • 2 slices of bread
  • 125ml (½ cup) milk
  • 15ml (1 tbsp) olive oil
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 5ml (1 tsp) crushed ginger
  • 5ml (1 tsp) turmeric
  • 15ml (1 tbsp) medium curry powder
  • 1kg lean beef mince
  • 45ml (3 tbsp) chutney
  • Salt and pepper
  • 50g Montagu Seedless Raisins
  • 75g Montagu Turkish Apricots, chopped
  • 8 bay leaves
  • 3 large eggs
  • 375ml (1½ cups) milk
  • Rice, to serve
Servings: 6-8 portions

METHOD

  1. Preheat the oven to 180°C and lightly grease a large oven dish. Place the slices of bread in a small dish and pour the milk over them. Set aside to soak.
  2. Heat the olive oil in a deep saucepan. Add the onion and fry gently until soft. Add the garlic, ginger, turmeric and curry powder and cook for a further minute.
  3. Add the mince and brown. Add the chutney and bread and mix well. Season well with salt and pepper and stir through the raisins, apricots and four of the bay leaves.
  4. Transfer the mixture to the oven dish and smooth into an even layer. Place the eggs and milk in a small bowl and whisk well until combined. Pour over the mince and top with the remaining bay leaves.
  5. Bake for 45 minutes or until the topping is set and golden. Serve with the rice and extra chutney.
