Vegan banana walnut muffins
Vegan, banana, walnut muffins. These muffins are yummy and healthy. Once you get in the swing of plant-based baking it becomes as easy as 1,2,3. Also, these yum-snacks are gluten-free.

Makes 12 muffins
4 mashed bananas
3 tbsp ground flax with 4 tbsp warm water
1/2 cup oil
1 + 3/4 cup Gluten Free cake flour
1/4 cup rice flour
1 tsp baking powder
1 to bicarbonate soda
1 tsp cinnamon
3/4 – 1 cup sweetener of choice (like coconut sugar)
1/2 cup chopped pecans
1/2 cup chopped walnuts
1. Set oven to 180 degrees C.
2. Mix wet ingredients together.
3. Mix dry ingredients together.
4. Slowly mix wet into dry.
5. Divide among 12 muffin hole tray lined with cupcake paper cups.
6. Bake for 15-18 mins.
