Carrots and nuts. Brings to mind healthy snacking, doesn’t it? We think so. You can enjoy each of them a snack or combine them to make a crunchy salad.

“I grew up with the mantra that ‘carrots help you see better in the dark’, which appealed to a kid who liked to play ‘donker kamertjie’ so I’ve always liked carrots. The beta-carotene does actually help improve eye health, but did you know that carrots also help lower cholesterol levels?

What takes this salad from ordinary to amazing is the addition of walnuts and pine nuts. Walnuts are high in omega-3 fatty acids, and essential nutrients such as selenium, calcium, vitamins B and D. Think of it as a super healthy carrot cake (lol).” Amy Hopkins.

INGREDIENTS:

  • 1  bunch rainbow carrots – all colours, sliced into ribbons with a peeler,
  • 2 tbsp toasted pine nuts,
  • ¼ cup chopped walnuts and a handful of fresh coriander.

METHOD:

Toss together with a basic dressing made from olive oil, lemon juice, agave and mustard and serve as a delicious side dish.
