Chocolate Nib Seed Bars
Chocolate Nib Seed Bars are the perfect nutritious treat. These seed bars are an excellent source of energy and nutrition. This is a wonderful way to treat both children and adults alike. The xylitol adds a wonderful sweet flavour and the cocoa nibs gives these bars an amazing crunch and texture. Use all the seeds and nuts that you like and turn this into you own signature dish.

Preheat your oven to 180 degrees Celsius.
300 g of your favourite Montagu Dried Fruit and Nut seeds. We have used sunflower, pumpkin, white sesame seeds and poppyseeds
50 g of ground flax seeds (just ground it at hime on a food processor)
50 g of melted coconut oil or butter
1 table spoon of vanilla essence
1 teaspoon of cinnamon
5 table spoons of xylitol
80 grams of cocoa nibs
120 g of unsweetened coconut
40 g of dutched cocoa powder
1. Place all the seeds, ground flax seeds and eggs in your food processor and pulse until a paste forms
2. Add all the other ingredients and mix through well
3. Line a baking tray with wax paper and press the seed mixture into the pan, bake for 20 min let it cool and cut into slices
